the chef proprietor of “Catering
& Allied”- one of the leading

“Joss” - a fine dining restaurant
that offers modern far eastern cuisine, Farrokh
is out to conquer the culinary scene and has trail
blazed his expertise to match his innovative repertoire
on par with the best international culinary standards.
After a short stint with architecture, Farrokh’s
love for food drove him to successfully complete
three years with rankings from the prestigious
Institute of Hotel Management, Catering Technology
& Applied Nutrition at Bombay, where he won
numerous awards, including the All India Student
Chef Competition.
He later, traveled overseas and spent his formative
time, training at the renowned French restaurant
“Au Normandy” and later at the “Panorama
Rue Boucicot” in Paris. This formal training
enhanced his flair for European Cuisine and Farrokh
went on to create gastronomic delights for the
menus of his fledgling company “Catering
& Allied”.
Farrokh’s entrepreneur spirit restricted
him from taking up a job. He realized that he
could achieve higher heights on his own and took
up the challenge to grasp his own dreams. From
a single kitchen unit in the precincts of his
residence to the chef proprietor of one of Bombay’s
leading catering companies and fine dining restaurants,
he has proved his worth as a man who has climbed
metaphorical mountains.
The “Catering and Allied”
menu offered by Farrokh is a treat to the senses.
His stunning creations include Smoked Oysters
on Liquored Figs, Quail with Rosemary, Snow peas
and Water Chestnuts in Oyster Sauce, Teppanyaki
grills. Though his staple is Continental, he has
added reams and reams to his Oriental, Indian
and Parsi menus. Flambéed desserts and
elaborate bar menus are his specialties, while
his Chocolate Margaritas are in big demand. Crafting
a party dinner to one’s taste and liking
and creating personalized menus are one of the
many value added services offered by Farrokh’s
catering company.
With his entrée into the world of Far-Eastern
Cuisine, came the dawn of “JOSS”,
a temple of fine dining, conceptualized by Mr.
Farrokh Khambata himself. The novel menu encompasses
Japanese (sushi and Teppanyaki), Malaysian, Indonesian,
Balinese and a host of other exotic Far Eastern
cuisine. JOSS, also offers sumptuous and innovative
desserts and a congregation of great cocktails
and world wines. The cuisine is a masterful blend
of oriental flavors presented in a European style
and is polished yet not pretentious, elegant yet
not over-the-top.
Farrokh’s philosophy in Food is simple.
Use the freshest ingredients that are made available
to you. Don’t compromise on their quality
and be creative at every stage. Even to this day,
Farrokh feels the need to refresh his skills from
time to time. The drive and curiosity to grasp
more about global cuisine and palates, often,
takes Chef Farrokh Khambata traveling to far and
distant places. Motivated by his passion for food,
Farrokh continues reinventing himself. His latest
success venture is the first-class banquet facilities-
The Rampart Row, all encompassing 12,000 sq. feet
of prime space in south Bombay. His present achievements
are just a teaser for the city and more is yet
to come.
